Shrimp Creole
Ingredients
| 3 lbs peeled shrimp |
1 cup chopped parsley |
| 1 stick butter |
1 tbs thyme |
| 8 tbs flour |
1/2 tsp basil |
| 1 14oz can tomato sauce |
3 bay leaves |
| 2 cups chopped white onion |
3 cups chicken stock |
| 1 cup chopped green pepper |
1 tbs brown sugar |
| 1 cup sliced celery |
Tony Chachere's Creole Seasoning |
| 1 cup chopped green onion |
3 cloves minced garlic |
Melt the butter in a large pan. Saute the shrimp for 2-3 minutes, remove from pan
and set aside. Add the flour and stir over medium heat until the flour is lightly
browned. Add the white onion, celery, green pepper and garlic and saute until the
onions are transparent Add the stock, tomato sauce, thyme, basil, bay leaves,
brown sugar and Creole seasoning. Simmer for about 15 minutes. Add the green
onions, parsley and shrimp and cook for about 5 more minutes. Serve over rice.
